Strawberry Pie Vegan Ice Cream
It has been almost a full month since my summer vacation officially started and I would have thought I would have had a lot more time to dedicate to blogging, but not so much. I am still working at the church and picking up gigs where I can to pay the bills. Doesn't sound much like a "vacation" at all, but, it is what it is.
So, what have I been up to since my last post? A lot.
Here's quick flashback.
I came up with this ice "cream" a few weeks ago, but have been preoccupied with parties, patio drinking, Aphrodite's 18th and giving low frequency souls too many chances that they're not worthy of. It's been a whirlwind of a summer already and it just started. It can only get better from here and am excited about all of the fantastic opportunities that are already popping up since I dropped some dead weight. Bring it on universe, I am ready!
This ice "cream" would be a bit smoother with an ice cream maker, but I don't have that fancy crap. So, I made do and let it thaw and still we have a creamy delicious vegan treat, Ta-dah!
Serves: 6 High Frequency Flying Souls
Ingredients:
1 Can Coconut Cream
6 Cups Sliced Strawberries (4 Cups, plus an additional 2 Cups)
1 Cup 100% Maple Syrup
6 Gluten Free Cones
Additional Toppings:
1/2 Cup Gluten Free Graham Crackers-crushed
Strawberry Topping
Whip the coconut cream till stiff (ish) in a food processor, add the 4 cups of the strawberries and add maple syrup. Yes, I added a whole cup, because. Shit. That stuff is fucking delicious, but feel free to cut it down a bit. However, it is still refined sugar free!!! Maple Syrup it, the fuck up. Process till smooth. Then pour into a bread loaf (preferably metal) pan and stir in the additional 2 Cups of strawberries and freeze.
Freeze over night or if you're a fancy pants, process it in an ice cream maker. If you're just a normal person, like me, after freezing it overnight, let it sit out till it softens. I let mine sit in some warm water to hasten the process, but be careful to not let it soften too much. Scoop onto some gluten free cones, or scoop into a dish. Top with strawberry topping or fresh strawberries and some crushed graham cracker topping.
