Vegan Lasagna Soup
A few weeks ago, I was trying to be friends with an ex (again). In retrospect, thinking we could manage to be friends was silly. There's reasons why people are no longer together. And the fact that they're not together proves that one of them is incapable of honesty. In our case, it was a lovely combination of the absence of honesty, a shortage of unconditional love, miscommunication, selfishness, denial, and lack of empathy. Disturbingly, all the qualities I don't want in a lover or a friend.
Do I still love him? Hell Yes. But I have finally come to terms with the fact that, I can't save all of them. He doesn't even want to save himself. And I have to be okay with that.
Let's talk about detachment vs. non attachment. The buddhists believe in non attachment, which is not allowing our emotions to control us. This is something my ex/ex friend claimed to follow.
I am working on this and think it's a great way to live life. Focusing on ourselves, accepting change and forming healthy relationships is the way of life.. But him and a lot of people get it twisted with detachment. Kind of ironic and really, really sad.
Can I save everyone? Obviously not.
Can I let it tear me down? No.
All I can do is, live and learn. That's all that we really can do.
Okay, enough of all that. Let's get down with this soup. It's vegan and fucking amazing. Eat this and forget that you lost a little part of your soul.
Serves: One Evolved little soul who has to eat all week
Ingredients:
2 TBS EVOO
1 Med Onion-chopped
1 8 oz package of seitan (I prefer Uptown Naturals)
3 cloves minced garlic
3 TBS poultry seasoning
In a soup pot on Med, heat EVOO. Saute onion and garlic till fragrant. Add seitan and poultry seasoning till warmed. Continue to add the rest of the ingredients...
For the rest of the soup:
12 oz Tomato Paste
1 26 oz. jar of marinara
2 TBS Better Than Bouillon paste (Vegetable)
6 Cups water
2 tsp Dried Basil
1 TBS Oregano
1 tsp. Thyme
Bring to a boil
Add:
7 lasagna sheets-broken into pieces and simmered, till soft
1 Cup Frozen Spinach
S&P
Top with dollop of Ricotta (if vegetarian) or crumbled tofu mixed with Italian season, garlic powder, onion powder and a little s & p. Also, throw some vegan parm ontop too. Cause, why the fuck not?!
